Herb Hummus With Dill



Hummus is one of life's great treats. Even before it became popular in the U.S., I was a fan of garbanzo beans (chickpeas), and used them in soups and salads. This easy hummus recipe spices things up a little. Give it a try on a hot summer day. It's filling and refreshing.

Herb Hummus With Dill Recipe

Ingredients:
  • 1 (12 – 15oz) can of chickpeas
  • 2 tbsps tahini
  • 2 tbsp lemon juice
  • 2 tbsps lime juice
  • 2 tbsps water
  • 2 tbsps olive oil
  • 2 garlic cloves, sliced
  • 1-1/2 tbsps fresh dill (or 1-1/2 teaspoons dried)
  • 1/2 teaspoon dried mustard
  • 1/2 teaspoon smoked paprika (sweet if possible)
  • salt to taste
Directions:
  1. Combine ingredients.
  2. Blend in a food processor until creamy. The consistency should be smooth. If it starts to pull away from the sides of the processor and form a ball, it's too dry; add a little more olive oil and blend until you achieve the desired consistency. 
  3. Chill.

Serve with pita bread, crackers, or fresh vegetables. Don't forget to add a sprig of dill to the bowl for garnish.
